This is all my creation. This is also what you get when you only have a few odd ingredients in your household and have to make dinner!
Mediterranean Chicken Pillows
servings: 2.5 (6 pillows)
approx. 1/2 cup olive oil (or if you don't care about your fats, melted butter)
8 sheets Fillo Dough
4-5 chicken breast tenders, cut into bite size pcs.
1/4c sundried tomatoes, chopped (I use the Trader Joes ones, they're cheap & great!)
1/4c kalamata olives, chopped
1/2c mozarella cheese, shredded
1/2c fresh spinch, chopped
Preheat oven to 425 degrees.
In a medium bowl mix together the tomatoes, olives, cheese and spinach. Season the chicken with salt and pepper.
Brush a large cutting surface with some olive oil. Place a single sheet of fillo dough on the oiled surface and brush with more oil. Top with another layer of dough and oil until you've used 4 sheets of dough. Cut the layers of dough into three equal sections (not long ways) and top each section with a generous scoop of the tomato mixture. Top each mixture with 4-5 peices of chicken then fold the dough over and seal the edges the best you can. Place on a baking sheet and then start the process all over again until you've made the last 3 pillows.
Bake for 18-19 minutes or until golden brown.
