Currently Cooking



Here's another good one in case you have some left over oats. These are the cookies that are very similar to a nature valley granola bar. I brought them to the last game night at J.Mack's, they're always a hit and are VERY addicting when they are still warm. mmmmm


Crispy Oatmeal Cookies
2 cups quick cooking oats
1/2 cup light brown sugar
1 egg
4 Tablespoons vegetable or coconut oil
2 Tablespoons maple syrup
Pre-heat oven to 375 degrees. Lightly grease 2 cookie sheets.
Mix the oatmeal and sugar in a bowl, breaking up any lumps in the sugar.
Add the egg, oil and maple syrup and mix well. Then leave to soak for 15 minutes.
Using a tablespoon, place spoonfulls of the mixture well apart on the prepared cookie sheets. Press each mound into a 3" flat circle with a fork dipped in water (to prevent sticking)
Bake the cookies for 10-12 minutes or until golden brown. Leave to cool for a few minutes on cookie sheets then transfer with a spatula to a wire tray to cool. When cold, store in an airtight container.

daedra these cookies are awesome!!! grande shared a few with us today before they left! i was going to ask you for the recipe but now i have it!! thanks! btw, how is brian? i was thinking about him today and releasing healing for him!

Thanks, I'm glad someone enjoyed them, I was afriad they would go uneaten with all the other great food you guys had.
When we got home Brian puked up everything he ate last night. He felt better after that but he's been kinda light headed today if he doesn't eat enough. Thankfully I don't think it's the flu or anything long term.

Might make these tonight. Already made the banana bread but I was too lazy to go out and buy raw sugar.

Also don't think you need the airtight container - you just have to eat fast.

yeah, when I make them the poor little cookies never make it into an airtight container.
